Learn to safely preserve fruits and vegetables. This class is for beginners or a refresher course for experienced preservers. Determine the difference between various food preservation methods - water bath, pressure canning, drying, and freezing foods. Participants will:
• Be able to locate safe, reliable resources.
• Learn why high and low acid foods must be processed
differently.
• Receive a packet of useful recipes and resources to use year
round.
• Find out why grandmother’s jam may not be safe.
• Learn to ferment pickled products.
• Sample some preserved foods.

The CAP rating is the achievement of the internationally recognized standard of proficiency in the secretarial and administrative support professions. In today’s workplace, having the CAP credentials can be assurance of employability, pay increases, bonuses and opportunity for advancement. The CAP examination covers three main subject areas:
• Office Administration
• Office Systems and Technology
• Management
To receive CAP certification you must register and pay a fee to the International Association of Administrative Professionals. The exam is given the first Saturday in May and November. UTC is an authorized testing center for the CAP examination. Textbook information will be sent to you upon registration.

Everyone thinks, but many thoughts dwell below the surface of expression. When you “hear yourself think” by slowing down the expression of thought through writing, thoughts evolve. Personal intelligence expands. You become more knowing, more useful to yourself. Deep thinking through PW is a creative way to come face-to-face with the thoughts that influence your life profoundly. Like prayer, deep thinking demands openness and undivided attention; it requires the different facets of the mind to work together as a whole, producing a healthful, life-affirming attitude and a sense of greater mental space.
