Narrative: Metropolitan Nashville Public Education Foundation, with initial funding from the Tennessee Department of Disabilities Council, piloted a Special Education Culinary Arts Inclusion Project in Metropolitan Nashville Public Schools during the 1997-98 school year at Glencliff High School. A total of 126 students in all grade levels participated in the project. It evolved in response to an academic improvement need in the culinary arts program. Emphasis in the program was on math, measuring and nutrition and utilized an inexpensive CD/ROM to aid in teaching students. A "Peer Buddy Program" was also added which served as a for-credit tutoring course where qualified students are assigned to a special-education teacher who assists them. Funds from the Tennessee Developmental Disabilities Council provided the resources to pilot an intervention program using an adjunct teacher. Rather than using limited funds to hire an adjunct instructor to support this program another year, they plan to sustain the program by pairing a Glencliff special education/resource teacher with the Culinary Arts instructor next year.
It Works! The integration of adjunct instruction, special education services and a Peer Buddy Program will strengthen the workforce preparation efforts in the Glencliff High School Culinary Arts program. Research by Peabody College at Vanderbilt University has documented the success of the Peer Buddy Program as yet another creative solution to providing the individualized instruction and socialization needed to enable all students to fully participate in day-to-day school activities.
